Eggplant Taco Lunch Experiment

Spicy Eggplant Tacos

I made these for lunch today out of a big eggplant I got from the CSA veggie box a couple weeks ago. I grated the eggplant using a food processor. Kevin bought tortillas, cilantro, and salsa across the street at the King Ranch Market. I mixed these things into the grated eggplant:

2 tsp cumin
1 tsp garlic powder
1 tsp salt
1/2 tsp coriander
1/4 tsp black pepper
1 tbsp olive oil

I started with a recipe that can be found here. I didn’t have paprika, so that was the only thing I left out of the recipe I’ve linked to. While cooking the eggplant in a pan, I added some spicy red pepper paste. Microwaved a stack of corn tortillas for thirty seconds, put the eggplant mixture on top, followed by chopped onion & cilantro & salsa roja. Paired with a Mexi-Coke. Yum! Step by step photos here.
